How Silvercreek Sourdough Scaled Production with Vanrooy Bakery Equipment

For bakery owners, growth often comes with a delicate balancing act: meeting increasing customer demand while maintaining the quality and authenticity of your products.

Silvercreek Sourdough, a beloved artisan bakery in Australia, offers a perfect example of how smart equipment decisions and trusted partnerships can help small bakeries scale successfully without compromising their craft.

Industry: Artisan Bakery, Sourdough Bakery

Location: Beechworth 3747, Victoria, Australia

Their Vanrooy Equipment: Salva NXD 2 Deck (Now 4 Deck), Escher M100P Spiral Mixer and a Vitella Manual Bun Divider Rounder.

The Journey of Silvercreek Sourdough

Louise Ritchie, the founder of Silvercreek Sourdough, didn’t start out in the bakery business. Bread making was a personal journey sparked by health needs. In 2011, Louise, her husband Mik, and their children were all deemed gluten intolerant. After months on a restrictive gluten-free diet full of packaged products, Louise discovered a small but life-changing insight in a bread book: sourdough fermentation breaks down gluten, making it easier to digest. That one sentence ignited a passion—some might even call it an obsession—for bread.

By January 2014, after being made redundant, Louise had extra time on her hands and began baking constantly. So much bread was produced that she started giving it away to friends and neighbors. Soon, she wondered if people would pay for her bread. By March 2014, she baked her first commercial batch of 18 loaves. Just two months later, 80 loaves sold out in under two hours. The demand was clear, and Silvercreek Sourdough was officially born.

Louise’s signature offerings, including traditional sourdough and sourdough crumpets, are crafted through a meticulous three-day fermentation process. This slow fermentation encourages wild yeasts and beneficial bacteria to develop flavor while breaking down gluten proteins—making the bread easier to digest and potentially suitable for those with gluten sensitivities.

Choosing Vanrooy: From Second-Hand Equipment to Smart Upgrades

Like many small bakeries, Silvercreek Sourdough began with second-hand equipment. While functional, Louise quickly realised that growth would require investment in high-quality, reliable machinery. In 2018, she became a Vanrooy Machinery customer, drawn to our reputation for both exceptional service and quality equipment tailored for bakery businesses.

Louise’s first Vanrooy purchase was a Salva NXD 2 Deck oven, spec’d with future growth in mind. The oven was designed so that additional decks could be added when production demands increased—a smart solution for bakeries scaling up gradually. A few years later, Louise took advantage of this modular feature, expanding her oven to a 4 Deck Salva NXD. Today, the upgraded oven allows her to meet growing demand without sacrificing consistency or quality.

In addition to the oven, Silvercreek Sourdough invested in an Escher M100P Spiral Mixer and a Vitella Manual Bun Divider Rounder. The Vitella divider was particularly significant. Louise visited Vanrooy’s state-of-the-art Test Kitchen multiple times to trial the machine with her sourdough recipes. Being able to test the equipment before committing gave her confidence that it would work seamlessly with her production needs.

Scaling Production While Maintaining Quality

One of the biggest challenges for growing artisan bakeries is scaling production without compromising product integrity. With Vanrooy equipment, Silvercreek Sourdough was able to increase output while keeping the slow fermentation and hand-crafted techniques that make their sourdough so special.

The 3-day fermentation process still dictates production schedules, but with reliable, high-capacity equipment, Louise can now produce enough loaves and crumpets to satisfy loyal customers while planning for future growth. The modular nature of her Salva oven and the efficiency of the Escher mixer and Vitella divider ensure that even as volume increases, quality and consistency are never sacrificed.

Lessons for Other Bakery Owners

Silvercreek Sourdough’s journey offers several practical takeaways for bakery owners looking to grow their business:

1. Invest in Equipment with Growth in Mind

Louise’s Salva oven was purchased with the future in mind, allowing additional decks to be added later. Investing in equipment that can scale prevents the need for constant replacements and allows bakeries to grow without major interruptions.

2. Test Before Committing

Using Vanrooy’s Test Kitchen to trial the Vitella Manual Bun Divider Rounder allowed Louise to ensure the machine could handle her specific sourdough recipes. For bakery owners, hands-on trials can prevent costly mistakes and provide confidence in new machinery.

3. Prioritise Quality Alongside Capacity

While scaling production, maintaining product integrity is crucial. Silvercreek Sourdough demonstrates that high-capacity equipment does not have to mean mass-produced, lower-quality bread. Strategic investments can maintain artisanal standards even as volume grows.

4. Choose Partners Who Understand Bakery Needs

Louise appreciated Vanrooy’s combination of service and expertise. For small bakery businesses, partnering with suppliers who understand both the technical and practical sides of bakery operations can make a significant difference in long-term success.
