• The fire box is separate from the baking chamber, so the fire box outlets can be separate from the ones in the baking chamber
• The lateral fire box is separate to the baking chamber allowing separate management. The oven cools down slowly making it possible to bake several batches of bread before refuelling the fire box again
• After the first heating the oven is rested to get homogeneous temperature in the baking area. The oven is then able to retain high heat for a long duration.
