<p>The history of Bravo is the story of a man whose passion and obstinacy made a dream come true. The founder, Genesio Bravo, was born in 1939 in a small Italian farm village in the province of Vicenza, where he passes his childhood and youth. Those times during the war and after the war are very difficult, but they also provide desire to bounce back.<br />
Genesio Bravo had a dream since he was young: to build something new with his own hands. It is only after a long working career in several important engineering companies in Vicenza that he decides to go it his own. Thanks to a friend&#8217;s suggestion he chooses the road of gelato machines.</p>
<p><strong>And so in 1967 Bravo came about.</strong></p>
<p>Following the tradition of those years, the multi-machine system, Genesio begins producing pasteurisers and batch freezers. But this does not satisfy him, while he continues to study how to improve the system, he has this question:why can&#8217;t the mixture be pasteurised and batch frozen in just one machine, thus saving time, energy and space?</p>
<p><strong>This is the start of the revolution</strong>: in 1974 Genesio deposits the first of a long series of patents: <strong>Trittico</strong>, the first and only complete laboratory enclosed in just one machine, which in less than one square metre pasteurizes and batch freezes high quality artisan gelato. A patent which radically changes the way of thinking the artisan gelato workshop.<br />
With Trittico a new way of making gelato has begun: the Trittico method, the new Bravo adventure, one machine, inimitable, which is the most copied machine in the world today.<br />
But Genesio does not stop there as his machine is his creature which must progress and always be updated. And so through the years new ideas come about, new expedients making work easier, new generations of machinery are invented, until the current Duo Series.<br />
<strong>Trittico today is no longer a gelato making machine, but a true gelato, pastry and catering laboratory</strong> which with complex software and advanced technology is able to control many types of processes automatically, at the same time respecting tradition and the creativity of the professional.</p>

										<content:encoded><![CDATA[<p>Mixcream is a cream cooker of the latest generation that allows the production of many pastry products. Perfect creams thanks to the innovative agitation system that reproduces the Pastry Chef’s movements. A special junction of the “sail” blade, thanks to a particular spring, allows the production of extremely soft and smooth creams with no lumps. At every turn of the stirrer, the mixture is pushed towards the tank wall by the “sail” blade and becomes more and more refined. The scraper then collects the residual cream from the tank wall and put it in circulation again for further refining.<br />
Smart cooling thanks to the cooling surface of the tank split in 2 sections. This allows an automatic (or manual) total or half cooling: the result is the smoothness in the cooling of the egg cream and the same high quality also for low quantity of the product inside the tank. Furthermore, thanks to the Bravo’s patented use of speed variators of the latest generation the machine manages the mixing speed of the cream in accordance with the cream features.</p>

<p><strong>This is the start of the revolution</strong>: in 1974 Genesio deposits the first of a long series of patents: <strong>Trittico</strong>, the first and only complete laboratory enclosed in just one machine, which in less than one square metre pasteurizes and batch freezes high quality artisan gelato. A patent which radically changes the way of thinking the artisan gelato workshop.<br />
With Trittico a new way of making gelato has begun: the Trittico method, the new Bravo adventure, one machine, inimitable, which is the most copied machine in the world today.<br />
But Genesio does not stop there as his machine is his creature which must progress and always be updated. And so through the years new ideas come about, new expedients making work easier, new generations of machinery are invented, until the current Duo Series.<br />

										<content:encoded><![CDATA[<p>Batch freezer Gelmati Startronic Premium is the result of 50 years’ experience of Bravo specialised R&amp;D on combined machines. Patented refrigeration system formed by monobloc cylinder with reduced diameter provided with multi-points and multi-rings gas injection system that directly expands along cylinder walls. Ensures quick and effective homogenous cooling turning the water into small, regular crystals in order to obtain a soft, creamy and stable gelato in the showcase.</p>
<p>The blades icebreaker mixer made by stainless steel, with interlocking connection in the front door to keep it aligned along time. Mixer prevents the formation of ice along cylinder’s walls, keeping intact their cooling efficiency. It is equipped with self-adjusting scraper teeth that adhering perfectly to the cylinder walls to prevent the igloo effect, crush ice crystals and making them more fine.</p>
<p>Front door made by special heat insulating material to prevent the dispersion of cold. It contributes to rapid batch freezing, reducing power consumption and avoiding dripping during gelato extraction.<br />
