Since opening in 2022, Butterken has become a destination not just for locals, but for German tourists who arrive looking for a taste of home. Anita and Hendrik’s story begins, as many great bakery stories do, with a frustration. The pair met while travelling abroad, with Hendrik struck by how difficult it was to find genuinely good bread outside of Europe. Back in Australia, the problem was just as acute. Bakery culture runs deep in Germany — when you ask Germans what they miss from home, the answer is almost always beer first, and then bread. Dense, nutritious, deeply flavoured bread that bears no resemblance to the mass-produced loaves filling supermarket shelves.

The pair spent five years developing the concept before opening Butterken Bakery in Mount Eliza in 2022. They chose the Mornington Peninsula deliberately — a community they believed shared their values around food, quality and sustainability. The name itself is regional German slang for a daily portion of bread and butter. It is humble, warm and entirely fitting for what they have built.

From the beginning, Anita and Hendrik have been clear about what they are trying to do. Many Australian chain stores use enhancers and improvers to guarantee a consistent result regardless of who makes the bread. At Butterken, sourdough is treated as the living, organic product it is — one that requires skill, patience and the ability to problem-solve. As Anita puts it, they want people to know what is in their food, who makes it and how it is made.

Hendrik brings a degree in biochemistry to the kitchen, but he is quick to point out that great bread has less to do with structure and composition and more to do with time, temperature and touch. Every loaf at Butterken is handcrafted using an organic sourdough starter and slow-fermented for 24 to 48 hours, with the team beginning at 5am each morning to ensure everything is ready when the doors open.

Where German Tradition Meets Australian Produce

Walk into Butterken and their racks of freshly baked bread and pretzels tell the story immediately. Signature Butterken Sourdough, Poppy and Flaxseed, German Rye, 100 percent wholegrain spelt — loaves that reflect both the European tradition Anita and Hendrik grew up with and the quality local produce available across Victoria. Organic and wholegrain flours come from Wholegrain Milling Co, with fresh fruit and vegetables sourced from Mount Eliza Village Fruits. A massive glass frontage lets customers watch the baking in progress, with Hendrik leading his small team through the daily bake in full view.

The pretzels have become something of a signature. Hand-rolled daily and fermented overnight, the team swings 300 of them on weekends alone — baked to perfection and finished with sea salt, available plain, buttered, dusted with icing sugar or slathered in cream cheese and chives. For something sweet, the heidesand — a traditional browned butter shortbread — and the bienenstich, a German classic featuring brioche layers filled with custard and topped with toffee almonds, have both earned devoted followings.

In 2024, the bakery expanded its production by taking over a secondary space at the back dedicated to patisserie. Kept at a precise 18 degrees to suit the pastry work, the new room has allowed the team to expand into sourdough croissants, dinelle — a German sourdough pizza — and a growing range of sweets and seasonal creations. It is a significant step forward for the business, and one that has been matched with the right equipment to support it.
