Tony Dench, Dench Bakery, Melbourne 2005. Tony had started with @bakerdchirico then went to open his own place together with his father John. I went to see @denchbakers the week it was first open (possibly even the first day), and loved the bread they were making right from the start. John Dench was a chef, I think, so he looked after the general cooking while Tony concentrated on the bread. They had a fab new Salva oven @vanrooy.com.au and the crust on the loaves was superb. Baker D Chirico, St Kilda, Australia. Back in December 2001 I wandered up Fitzroy Street in Melbourne and stopped outside a bakery called simply @bakerdchirico. It just had the look of a good place. The bread in the window looked great, and the look of the place with loaves stacked on bare steel shelves, the walls and fittings plain and unfussy, let the colours of the few simple baked bits that I could see really stand out in relief. At that point it was a little rough diamond, set in the jet black walls of an old bit of a 30s building, but it just looked so good. So I marked it down as a place to return to again. Daniel became arguably the fashionable forerunner of the 00’s Melbourne new generation bakeries, though to be very clear there was already extraordinary baking going on and many great bakers before and after. My friend John Downes’ “The Natural Tucker Bread Book” (1983) is still inspiring, bakers like @phillippasbakery is still going strong, and many other bakers have added to the vibrant baking community that Melbourne has. But what Daniel added was a design-oriented approach alongside his brilliant baking, and that combination was exceptional. @vanrooy.com.au
